Chicken Mushroom Corn Chowder Recipe

This is the easiest, quickest most delicious chicken soup ever! Serve with crackers and you have got a complete, hearty Fall meal that will fill you up and keep you warm. You can't go wrong with soups or chowders!

In a large soup pot, throw in a bag of mini carrots

Cover the carrots with free-range chicken stock. It comes in a carton like a large juice box.

Add as much shredded chicken as you like (pre-cooked)

Season with salt, pepper and garlic powder to taste. We like quite a bit of black pepper and less salt. Buy the low sodium chicken stock for a healthier meal.

Bring to a boil and cook the carrots in the chicken and stock for 20 minutes

Add as many of the following ingredients as you like:

  • canned corn (creamed or kernel)
  • canned sweet peas
  • canned sliced mushrooms
  • large can of cream of mushroom soup (condensed)
  • water as needed to make it soupy

Simmer this mixture for 10 to 30 minutes to heat through.

Spoon into bowls, serve with crackers and enjoy! Refrigerate the left overs and serve another day. It's good for seven days in the refrigerator. I'm willing to bet you can even freeze this soup and keep it longer or take it to work.

Bonus recipe - Spicey Krackers...

To make these addictive and crazy good crackers, you will need a very large bowl with a lid on it. I use my portable cake carrier.

Mix together:

  • 3/4 cup of canola or vegetable oil
  • 1 package of Hidden Valley Ranch Dressing Mix ©
  • 1 to 3 Tablespoons of crushed red pepper to taste (mild = 1T; med.= 2T; spicey = 3T)

Open two inner packaged of a box of saltine crackers (fat free kind), spread out into your big bowl.

Pour half of the oil mix over the crackers. Open the two other inner packages of saltines and spread on top of the first layer. Pour the other half of the oil mix over this layer.

Now comes the tedious part, but it's worth it!

Let the crackers sit for one hour. Turn the lidded container over so it is upside down and let sit another hour. Turn the bowl right side up and let sit another hour or overnight. Give the bowl a good shake when you are turning the crackers over.

These crackers will go very well with my quick and easy Chicken Mushroom Chowder Soup or you can enjoy them as a snack. Five spicey krackers have about 114 calories. Very nice.

That's way easier than the recipe I use! And I don't make it often because it requires so much chopping and cutting and dicing. I'll put this on my list for next week and the crackers sound awesome! Where ever did you get that recipe?

The crackers are totally awesome. My sister introduced me to these years ago. But it's hard to stop with just 5 crackers. So I eat 10!

I am making my list - so I do let them sit overnight after turning for an hour on each side? I am going to experiment and make some really mild and some spicy. The girls like spicy stuff too. I have just never heard of anything like it!

Just do a taste test and you'll know when they're ready! I think you can eat them right away, but letting them sit overnight makes them better.
