The best bread pudding in the world!
The County Line Bar B Que restaurant on Lake Austin is world famous. There is no finer eating anywhere else in the city, except maybe Stubb's BBQ downtown. Or The Salt Lick place in Driftwood and in Round Rock, TX.Then there's a place called Black's and well, the list goes on.
Yea, there's a glut of barbecue here in Texas and in the Capitol City there may be four or five of the best eating establishments anywhere in the world! It ain't braggin if it's true! How do you think Texans got to be so dang big? The cattle have longer horns than the government has arms! Truth not fiction.
Oh yes, back to the Jack Daniels Bread Pudding. We started eating this stuff back in 1995 and I don't think they have changed the recipe. They better not change a thing, because hands down, this is the best dessert in the Western hemisphere and quite probably the entire world! Once you have eaten The County Line's Jack Daniel's Bread Pudding, you will never want another dessert in your cotton pickin' life! Who wants to argue with me about that?
Although it's not truly my recipe, I have changed the amounts to a more reasonable 50 gazillion calories and now it fits into a home sized baking dish, not the restaurant size pan. If you want to make it for a crowd, the original recipe is here. They call it Mom's Bread Pudding. She must have been a wonderful cook!
Bread Pudding fresh out of the oven!
Mom's County Line Bread Pudding Recipe
Ingredients:
- 2 lbs coarsely chopped bread (Texas Toast works well)
- 1/2 t. Ground Cloves
- 1/2 t. Ground Nutmeg
- 2 t. Ground Cinnamon
- 1 cup tightly packed brown sugar
- 1/8 lb. (2-3 T.) real butter, melted
- 8-10 eggs, beaten
- 1/2 quart Half & Half
- 1/2 quart heavy whipping cream
- 1 T. bourbon or Mexican vanilla extract (get the real stuff)
- 1/4 c. real Jack Daniel's Bourbon (I say black Jack, but green label may work)
- 1 c. raisins
Procedure:
Pre-heat the oven to 325 degrees, F. Put bread cubes into a large container and allow to dry while whipping up the 'pudding'.
Combine the brown sugar, cloves, nutmeg and cinnamon in another large container. Mix well until blended.
Add the eggs, melted butter, half and half, heavy whip cream, vanilla and Jack Daniels to the brown sugar mix. Mix with a wire whip until well blended.
Pour the egg mixture over the bread cubes and mix gently. Add the raisins and mix them in.
Spray a 13 X 9 X 2 inch glass baking pan with buttery flavor non-stick spray. Pour the bread mixture into the pan and jiggle the pan to settle the bread. The top will be jagged. Don't worry about that.
Place the pan into the 325 degree oven and bake for 40 to 50 minutes until a toothpick can be stuck in and pulled out of the middle of the pudding clean and moist. Do not overcook. Ovens vary in their cooking time, so watch the time carefully.
Mom's Bread Pudding Bourbon Sauce
Ingredients:
- 1 lb. butter
- 1 lb brown sugar
- 1 cup heavy whip cream
- 2T. to 1/4 c. Jack Daniels Bourbon
Procedure:
Melt the butter in a heavy pan on the stove top at a medium setting (do not burn the butter!). Add the brown sugar a little at a time until mixed. Whisk constantly until the sugar is dissolved and the mixture is smooth and almost to the point of simmering. Don't boil the sauce! It will crystallize.
Slowly add the heavy whipping cream while continuing to stir. Blend well and immediately remove from heat.
Add the Jack Daniels Bourbon and mix well.
Serve the sauce over the Bread Pudding and go to dessert heaven! If you want even more calories, add a scoop of vanilla ice cream! You can get all of your daily allotment of calories in this one dessert!

Hollee, This bread pudding is totally awesome. I could eat this instead of the outrageous barbque that we go there for. I always order the bread pudding.
Now I know that the County Line cooks their own bread too and it's a sweet bread, so I use Challah bread for this recipe. I've also heard you can use day old doughnuts! Wow, what a sugar fest that would be :-)

Hey Gus, I've been a banana nut bread eater even back when I had a banana phobia. Did you mean use banana bread to make this bread pudding? What a swell idea!
Austinstar - I meant to make the pudding with banana bread. Heat does something to bananas - makes them a lot sweeter. No nuts in it and instead of raisins we like to use "Craisins", and they are less sweet than raisins. The recipe you have will not need any other adjustments than "Craisins" and banana bread. By the way, we also make the banana bread with bread flour instead of ordinary flour so that it comes out "less crumbly" after it is baked; that is, it hangs together much like ordinary day-old bread.
You say that you go for bananas. For breakfast today I had a couple of scrambled eggs microwaved in a bowl with a chopped-up banana. Sure was good.

Bread pudding with Jack Daniels???
Hi, Austinstar - I'm really not a big fan of bread pudding, but then again anything with Jack Daniels as a component can't be all bad. So I'll give it a try - just for you.
If you ever find yourself in Austin, be sure to dine at the County Line BarBQue! And order their bread pudding. I can't describe how delicious this stuff is. The brisket is pretty good too.

Austinstar - Several things:
Made some banana bread in a bread machine for the first time. The bananas are so "wet" that you have to cut back on the amount of water you use. I had expected that the bananas would weigh the bread down and keep it from rising so much. I was wrong. I wound up having to add a 4th cup of bread flour, and that puffed the thing up "over the top" such that I had to remove some before the bread was finished.
Another thing is that those "crazy raisins" are dried and sweetened cranberries by the brand name, "Craisins."
One more thing: The County Line Barbe"que" is worth a trip to Austin.

The County Line is worth a trip for brisket and bread pudding, The Salt Lick in Driftwood is worth 2 drives for their pork ribs and Elgin is worth a short flight for you to get some sausage!

Austinstar - Well. now, we made our "banana bread" using bread flour instead of ordinary flour. We made the stuff in a bread machine. THAT was a regulation riot. Followed the recipe for the bread as to the amount of flour and the quantity of water, etc. Then we put in mashed bananas. Oooops! That turned everything way too "wet." so in went about another whole cup of flour. That caused the production of far too much bread as the loaf baked. It rose and rose and rose. Had to "unload" some off the top to control things and to "unstuff" the machine. All the same. it worked out, and we got a big loaf of crusty banana bread.
Today we chopped up that loaf of bread, then followed the rest of your posted recipe, and baked our banana bread-bread pudding.
Oh my - it is the greatest.

Oh man, we almost went to the County Line today! Opted instead for surf and turf. Now I'm disappointed. I'll go to the store tomorrow and bake some banana bread and then bake some JD Bread Pudding! Thanks for reminding me!

Austinstar - My boss (tough old wife!) makes banana bread the way it is supposed to be made - regular flour, etc. I made this kind using "bread" flour and yeast, with a little extra sugar and mashed-up bananas. I baked it in one of those bread machines. Because of all of the banana mush in it, the batter was way too "wet." Next time I will cut back on the water and all should be OK. As it was, with so much overload of wet and addition of so much extra flour, my bread rose up really high and clogged the top of the bread machine - so I had to take some out. All the same, it worked out just fine and made some very nice bread pudding.
